Hi Friends, I am back with two new Elevated Eats recipes.
The first is a chicken gyro that may just become your go-to sandwich this summer. Moon honey is used twice in this recipe, in the tzatziki sauce and in a lemon honey drizzle that finishes the grilled chicken. This drizzle would also be delicious on grilled fish and veggies. All components of the gyro may be made in advance making this perfect for assembly on the go, or for outdoor entertaining. You will definitely want to make sure you have extra tzatziki on hand for dipping (tip: also serve as a veggie dip all summer).
Chicken Gyros
approximately 25mg THC per gyro when you use all sauces & drizzles
(4 sandwiches)

1 lb boneless skinless chicken thighs
Juice of 1 lemon (2-3 tablespoons)
2 tablespoons red wine vinegar
1/4 cup olive oil
1 tablespoon Moon honey
1 teaspoon kosher salt
1 1/2 teaspoons coriander
1 teaspoon smoked paprika
1 teaspoon dried oregano
Black pepper to taste

Season chicken with salt, pepper, coriander, paprika, and oregano. Whisk together lemon juice, vinegar, olive oil and Moon Honey in a bowl - toss seasoned chicken in the marinade. Refrigerate for 1-2 hours. Remove from the refrigerator 20 minutes before grilling so the chicken isn’t too cold when it hits the grill. Grill chicken using desired method until internal temperature reaches 170-175 degrees.
Sauces & Sides
For the gyro assembly. Use pita or naan bread. Layer chopped lettuce, chicken, tzatziki, tomato salad - Wrap and enjoy!
Tzatziki . 1 cup Greek yogurt (preferably full fat) 1/2 cup grated cucumber (salted and squeezed of liquid) 1/2 garlic clove, grated 2-3 tablespoons lemon juice 2 teaspoons Moon Honey 1/4 cup fresh mint, finely chopped . In a bowl grate cucumber and sprinkle with salt. Let sit for 10 minutes. Squeeze all the liquid you can out. Combine with remaining ingredients. Taste and season with additional salt if needed. Keep refrigerated. Serve chilled. | Lemon Honey Drizzle . 4 teaspoons Moon Honey 3 tablespoons lemon juice 1 tablespoon fresh oregano, finely chopped Red pepper flakes to taste. . Whisk all ingredients together. Drizzle over grilled chicken once it is off the heat. | Feta Tomato Salad . 4 oz feta cheese, cut into small chunks 1 cup fresh tomatoes, diced 1/4 cup red onion slices 2 tablespoons red wine vinegar 1 tablespoon olive oil Kosher salt to taste 2 tablespoons fresh mint, chopped . Toss all ingredients to combine. |

Bruschetta Flatbread with Burrata and Moon Honey - I’m sure to have your attention now. A stunning presentation with minimal effort that tastes delicious, what’s not to love? A quick homemade bruschetta, packed with gorgeous summer basil plus creamy burrata piled on top of a crispy flatbread could only be better drizzled with Moon Honey. Serve this for lunch, as a side dish, afternoon poolside snack, or late-night eat. It doesn’t matter what time of day, I promise this will always hit.
Bruschetta Flatbread with Burrata

(Serves 1-2)

1 store-bought naan bread
1 tablespoon olive oil
2 tablespoons basil pesto
1/4 cup low-moisture mozzarella, grated
1 teaspoon fresh thyme leaves

Spread oil and pesto over the bread. Sprinkle with mozzarella and thyme. Bake at 400 degrees until golden and crispy (about 10-12 minutes).

Bruschetta
.
1 1/2 cups fresh diced tomatoes
1/2 teaspoon kosher salt
1/2-1 garlic clove grated (depending on preference)
1/4 cup fresh basil, sliced into ribbons
2 tablespoons balsamic vinegar

In a bowl add tomatoes and garlic, sprinkle with the salt. Let sit for 10-15 minutes. Drain off excess tomato juice in the bowl. Toss tomatoes with the basil and balsamic. Allow to sit an additional 10 minutes. Season with more salt if needed.
For the flatbread assembly:
You will need 1 ball of burrata cheese.

Allow the cheesy flatbread to cool. Once room temperature, cut into slices. Tear Burrata and place a portion on each slice. Top with a generous amount of bruschetta. Finish with Moon Honey. I do one teaspoon (1 serving) for half of the flatbread. Top with more fresh basil and red pepper flakes if desired.
