Elevated Eats: Infused Cozy Chickpea and Spinach Curry with a Homemade Orange Cream Soda

Hi Moon Foodies! We are starting to see the first signs of spring here in the WV mountains. The air even smells full of life. The days are longer and brighter. I am noticing an extra pep in people’s steps. While spring is knocking at the door, we are still experiencing a roller coaster of temperatures - the food and mocktail pairing I am sharing today is a warm and cozy chickpea and spinach curry with a homemade orange cream soda, just right for these in-between evenings.


This recipe is packed with so many healthy ingredients. The spice level is adaptable to taste. Moon Honey is stirred in at the finish for the best flavor balance. Perfect for weekly meal prep as it is even better the second day. I serve this with warm naan bread, but for an even heartier option, serve over basmati rice.

Chickpea Curry + Homemade Naan

Cannabis Infused Curry

Curry Ingredients:

  • 1 can chickpeas, rinsed and drained

  • 1 1/2 tablespoons tomato paste

  • 1 cup tomato purée

  • 1 cup water

  • 1 1/2 cups full fat coconut milk

  • 1/2 onion, diced

  • 1 Serrano, diced (jalapeño for milder spice)

  • 3 garlic cloves, minced

  • 3 cups fresh spinach, roughly chopped

  • 1/4 cup fresh cilantro, chopped

  • Fresh lemon juice (about a tablespoon)

  • 3/4 teaspoon kosher salt (more to taste)

  • 1 tablespoon curry powder

  • 1 teaspoon cumin

  • 1/2 teaspoon Garam Masala

  • Oil for sautéing

  • Moon Honey

  • Naan bread for serving

Curry Directions:

  1. In a deep skillet or pot, sauté onion, Serrano, and garlic in oil over medium heat.

  2. Cook for a few minutes until tender; add salt, curry powder, cumin, Garam masala and tomato paste.

  3. Cook for a couple of minutes until the spices are fragrant.

  4. Add chickpeas, tomato purée and water.

  5. Bring to a boil, reduce to a simmer.

  6. Cover and cook 15-20 minutes over low heat.

  7. Uncover and stir in the coconut milk.

  8. Cook an additional 10 minutes.

  9. Stir in spinach cook until tender (just about a minute).

  10. Turn off heat and stir in cilantro and lemon juice.

  11. Taste test to check salt - adjust accordingly.

  12. Stir in honey, to infuse, start with one tablespoon and add to reach desired taste and effects.


Homemade Naan

Naan Ingredients:

  • 1 teaspoon sugar

  • 1/2 cup warm water

  • 1 packet of yeast

  • 2 1/4 cup flour

  • 1/2 cup plain yogurt

  • 1 tablespoon oil

  • 1/4 teaspoon salt

  • Oil for skillet

Naan Directions:

  1. Combine sugar, water and yeast - once it bubbles add yogurt, oil, salt and flour.

  2. Knead for about 10 minutes. Cover and allow to rise for 1 hour.

  3. Divide the dough into eight portions, roll each piece into roughly an 8 inch circle.

  4. Heat a cast iron skillet over high heat, and lightly grease it with some oil.

  5. Cook one bread at a time.

  6. Place in the hot skillet, once it bubbles and puffs up, flip over and cook the other side (about 2 min per side)

  7. Brush with melted garlic butter when out of the skillet. (melt 1/2 stick of unsalted butter, salt, 3 garlic cloves peeled over low heat).





For the mocktail freshly squeezed orange juice and honey give this drink such a light sweetness. Add as much or as little cream as you like. This one is currently on repeat in my house. The crisp soda and slight creaminess cut the richness of the curry just right. I hope you take some time to enjoy the cool mornings and longer evenings. Orange Moon Cream Soda

2 servings

Cannabis Infused Orange Cream Drink

Ingredients:

  • 6 oz freshly squeezed orange juice

  • 2 tablespoons honey* (more to taste)

  • 1-2 Moon Shots (depending on dosage preferences)

  • Club soda

  • Heavy cream**

  • Ice

  • Orange slices for garnish

Directions:

  • In a cocktail shaker, combine orange juice, honey, moon shots, and ice - shake until very cold.

  • Divide between two ice-filled glasses.

  • Add desired amount of cream, I like about a tablespoon per drink.

  • Then, fill the glasses with club soda. Garnish with orange slices.


Tips & Tricks:

  • Moon Honey may be used here or in place of Moon Shots.

  • If combining, use caution regarding dosing.

  • My favorite combo is using the CBD Moon Honey and 1 - 20mg THC Moon shot for 2 drinks.

  • Substitute full-fat coconut milk for a dairy-free option.
