Elevated Eats: Mocktail & Summer Snacks Edition

Hi Friends, today we are getting into a Moon fan favorite - infused mocktails. Think all the buzz without the hangover. Not that an excuse is ever needed to enjoy a buzzy little drink, but summer is meant for feeling a little wavy and enjoying the present moment. As we all know, every good drink deserves a snack pairing, so we've got you there. Each of these recipes are infused using Moon Shots and Moon Honey, creating a happy hour dream come true.


To start, for a cool summertime drink, I am sharing my recipe for a grapefruit thyme spritz. This homemade herbal mocktail, infused with simple syrup and grapefruit juice, makes the perfect refresher. This drink is topped off with sparkling water, keeping it light for the summertime heat. The sweet and salty rim will make it hard to put the glass down.


Grapefruit Thyme Summer Spritz


Ingredients:

  • 1 Moon Shot

  • 1 ounce thyme simple syrup*

  • 3 ounces grapefruit juice

  • Sparkling water (such as Topo Chico, Perrier)

  • Ice

  • Honey and flaky salt for the rim


Instructions:

  1. Dip the rim of a glass in honey, then flaky salt, and set aside.

  2. In a shaker, combine moon shot, simple syrup, grapefruit juice, and ice. Shake until frosty cold.

  3. Add ice to the salty-rimmed glass and pour in the grapefruit mixture. Top off with sparkling water.

Thyme simple syrup:

  1. In a saucepan, combine 1/2 cup water, 1/2 cup sugar, and 4-5 thyme sprigs and bring to a low simmer.

  2. Stir until the sugar is dissolved. Cool and refrigerate.

  3. This can be used to sweeten cocktails/mocktails, lemonade, tea, or homemade whipped cream. It keeps for 1 week.



Next is my recipe for a Coconut Citrus Dream mocktail. This drink combines a delightful blend of coconut and citrus with a hint of sweetness from honey, making it an ideal refresher for hot summer days. The toasted coconut and citrus zest rim adds an extra layer of flavor that’s hard to resist.


Coconut Citrus Dream


Ingredients:

  • 1 cup unsweetened coconut water

  • 1/2 cup coconut milk

  • 1/2 cup orange juice (freshly squeezed is best)

  • 2-3 teaspoons honey

  • 1 oz lime juice

  • 2 Moon Shots

  • Coconut flakes, citrus zest, honey for garnish



Instructions:

  1. Take 2 glasses and dip half of the rim in honey. Then roll the honey-coated rim in toasted coconut flakes and citrus zest for a flavorful garnish.

  2. Fill the glasses with ice and set aside.

  3. Combine all the ingredients (coconut water, coconut milk, orange juice, honey, lime juice, and Moon Shots) in a shaker with ice.

  4. Shake well to mix and chill the ingredients.

  5. Pour the mixture over ice in the prepared glasses.

  6. Enjoy your Coconut Citrus Dream!


All good drinks deserve a snack, and this Crispy Herb Feta with Pistachio Honey Drizzle is just the bite. Crispy salty feta with a little heat topped with a glorious combination of honey, pistachios, and flaky salt - summer bliss! The herb flavors mirror each other in each recipe, lending to a smooth culinary experience. Nobody is going to want to walk away from this cheese plate. Crispy Herbed Feta with Pistachio Honey Drizzle


Ingredients:

  • 4 oz block of feta cheese

  • 1/2 cup panko breadcrumbs

  • 1 tablespoon chopped fresh herbs (I used lemon thyme and rosemary) - dried herbs can also be used; reduce amount by 1/2

  • 1/2 teaspoon crushed red pepper

  • 1 egg

  • Neutral oil for frying (grape seed, avocado)

Instructions:

  1. In a bowl combine panko, herbs, and red pepper flakes. In a shallow dish whisk egg with a couple tablespoons of water.

  2. Slice the feta into 2 equal pieces. Pat dry with a paper towel. Dredge each piece in the egg wash, then pat it to coat it liberally with the breadcrumb mixture.

  3. Fry in shallow oil (sprinkle a drop of flour into the oil; when it bubbles, the oil is ready) - flipping once until golden on each side.

Pistachio Honey Drizzle:

  • 2 tablespoons Moon Honey

  • 1/4 cup chopped pistachios

  • Flaky salt to taste

  • Combine in a bowl and spoon over crispy feta. It's also delicious on yogurt or ice cream.


Last, we're diving into our Hazy Mary Mocktail, a savory option for folks who might need a hangover recovery drink. Did you know that the non-alcoholic ingredients in a Bloody Mary may help with a hangover?

  • Tomato juice: Can settle the stomach, boost liver function, and replenish lost vitamins and antioxidants

  • Salt: Can replenish lost electrolytes

  • Water: Can help with hydration

  • Vitamins C and B6: May help reduce the effects of a hangover

  • Fiber: From celery and tomato pulp can help with digestion


Add in cannabinoids, and you've got the ultimate hangover remedy!


Hazy Mary Mix

  • 23 oz tomato juice

  • 3 tablespoons Worcestershire sauce

  • 3 tablespoons prepared horseradish 

  • 2 tablespoons lemon juice

  • 2 tablespoons hot sauce

  • 1 teaspoon celery salt

  • 1 teaspoon garlic salt

  • Fresh cracked black pepper to taste

  • .

Combine all ingredients. Serve chilled.

Add 1 Moon shot to 6-8 oz of Hazy Mary mix.
