Elevated Eats: Thanksgiving Leftover Edition

Hi Moon Foodies, is there any better eating season?! Rules are out the window from here until the new year. Nobody blinks an eye about decadence or indulgence….so, let’s run with this freedom.


I hope everyone is having a fun Thanksgiving weekend. I have such a great leftover turkey sando recipe for you. To spice things up I combined leftover cranberry sauce with jalapeno cream cheese. For a touch of brightness and balance, greens dressed with lemon juice and Moon Honey are the perfect addition. Because texture is important, crispy fried onions (yes, the OG canned kind) and crunchy kettle jalapeno chips are layered into the sandwich. Didn’t cook a turkey?…make this sandwich with rotisserie chicken - it’s that good you won’t want to miss out.


Elevated Eats Leftover Thanksgiving Sandwich

1 sandwich


Ingredients:

Cannabis Infused Sandwich
  • Leftover bread (roll, croissant, cornbread, or any sliced bread)

  • Turkey slices

  • 3 tablespoons cranberry sauce

  • 2 tablespoons jalapeño cream cheese, softened

  • Fried onions (from the container)

  • 1/2 cup greens (arugula, spinach, mixed greens) - tossed with 1 tablespoon lemon juice and 1 tablespoon moon honey, salt to taste

  • Jalapeño kettle chips


.Directions:

In a bowl combine the cranberry sauce and cream cheese.

Spread cream cheese mixture on the bottom piece of bread. Sprinkle a layer of fried onions. Lay on the sliced turkey. Add dressed greens. Finish with crunchy chips.



Holiday Moon Honey Cranberry Sauce



Ingredients:


  • 1 bag fresh cranberries

  • 1 cup water

  • 1/3 cup sugar

  • 1/4 cup Moon Honey

  • 2 teaspoons orange zest

  • 1/3 cup orange juice

  • 1 sprig fresh rosemary

  • Pinch of salt.

Directions:

  1. Bring the water and sugar to a boil in a medium saucepan over medium-high heat, and stir until the sugar is dissolved.

  2. Add the cranberries, orange zest/juice, rosemary, and salt - bring to a boil.

  3. Reduce the heat.

  4. The cranberries will start to burst open, cook for 12 to 15 minutes until jammy and translucent.

  5. Allow to cool partially when the sauce is warm to the touch.

  6. Stir in Moon Honey.
